Ruby's Coffee Cake



Ruby was a sweet breakfast cook at the Theta House at Indiana University. I loved seeing her bright smile in the morning and she loved making coffee cake for us. She was so loving to share her recipe!

Cream together well:
2 1/2 cups sugar
1 1/3 stick of butter
3 eggs
1 tsp. vanilla
pinch of salt

Mix in:
4 cups flour
3 tsp. baking powder
1 can evaporated milk ( 2 cups milk)

Mix topping separately:
1 stick butter
1 tsp. cinnamon
1 cup pecans
1 cup brown sugar

Frosting:
1/2 stick butter melted
1 1/2 cup powdered sugar
water to blend
1 tsp. vanilla
1/2 tsp. salt

Grease pan. Pour in mixture. Put topping on cake before baking. Bake at 350 until done. Drizzle frosting on the cake. Enjoy warm for breakfast! Happy Thanks to Ruby!!!

Apple Cake from Tasty Blog

My mother-in-law calls this a pudding, but we call it apple cake. It’s yummy and goes great after dinner, or with a cup of coffee for breakfast. Great use for apples that are close to being too ripe.

Preparation Instructions

Mix together sugar, oil and eggs.

In a separate bowl combine dry ingredients, then add to the sugar mixture. Stir in apples and nuts.

Spread in a greased and floured 13 x 9 pan. Bake at 350ºF for 45 minutes.

Ingredients

  • 2 cups Sugar
  • 1-¼ cup Oil
  • 2 whole Eggs
  • 3 cups Flour
  • 1 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 1 teaspoon Cinnamon
  • 3 cups Diced Apple
  • ½ cups Chopped Nuts
