Butterscotch Banana Bread

4 ripe bananas
1/2 cup melted butter
1 cup brown sugar
2 eggs
1 tblsp. Vanilla
1 tsp. baking soda
Pinch salt
1 1/2 cup flour
3/4 cup chopped pecans
1 cup butterscotch morsels

Gingerbread Cookies

3/4 cup butter
1 cup brown sugar
1 egg
3/4 cup molasses
4 cups flour
1 tsp. Ginger
2 tsp. vanilla
1 tsp. nutmeg
1 tsp. cinnamon
2 tsp. pumpkin pie spice
1/2 tsp. salt

Crunchy on the outside and Soft on the inside! BISCUITS!

Today, I was not able to access the internet and found an old cookbook that I used when I first got married.  Thankfully, I used it as a guide to make a biscuit that was crunchy on the outside and soft on the inside - for my husband's preference!  He loved it and went back for seconds!  That is a compliment to me.

Ingredients:

Sift together

  • 2 cups flour
  • 1 tsp. Kosher salt
  • 1 Tblsp. baking powder
  • 1/2 tsp. baking soda
  • 1Tblsp. sugar                                                                                                                        
Cut in 1/3 cup Crisco
 Add 3/4 cups of buttermilk and then some!

Melt butter in an iron skillet and place biscuits in a row, covering them on both sides with the butter.
Bake at 400 degrees until brown on top - delicious!

Enchilada sauce

Ingredients:
Olive oil in sauce pan
Dice a bunch of green onions
Dice a yellow onion
Dice 2 cloves of garlic
1 tblsp. coriander
1 tblsp. cumin
1 tblsp. Chili powder
Dice 5 Roma tomatoes
Dice 2 vine ripened tomatoes
2 small cans of tomato sauce
1 can of stewed tomatoes
2 chipotle chiles and 2 tblsp. Chipotle sauce
2 tblsp. Butter
Might add 2 tblsp. Mole

Simmer all day until the tomatoes disappear!

Pumpkin Bread

Ingredients:
2 sticks of butter creamed
4 eggs
1 can of pumpkin
3 1/2 cups flour (self rising)
1/2 tsp. salt
1 tsp. allspice
1 tsp. cinnamon
1 tsp. nutmeg
3 tsp. vanilla
1/2 cup molasses
2/3 cup evaporated milk
1 cup sour cream

Mix ingredients and bake!  Makes 2 loaves and 9 muffins!

Teenager Time

Time to listen to big bodies with big hearts and big ideas and big mission statements.....
And, to provide big breakfasts at 4:00 in the morning hoping for a hug and a chance to let that teenager know about love meeting needs.  ....needs for prayer, a warm clean bed, a safe and loving home to retreat to, and a God who always accepts and loves.  My Mom heart is so big for a teenager son and daughter right now.  Some of us are teenagers for a long time.

Southern Fried Chicken

Cut up the whole fryer.
Soak the pieces in hot water.


Mix: 2 eggs and 1 1/2 cups buttermilk


Mix:  flour, salt and pepper, garlic powder, paprika, oregano, red pepper flakes


Dredge pieces in buttermilk, and then in the flour mixture.  alternate twice.


Place in hot oil and turn pieces for 40 minutes.  Place on paper towels and keep warm in oven at 150 degrees to crisp.

A REALLY Good Brownie

From Inspired Taste - adapted


Ingredients:
10 Tblsp. butter
1 1/4 cups sugar
3/4 cups unsweetened cocoa
1/4 tsp. Kosher salt
3 tsp. vanilla
2 large eggs
1/2 cup flour
1/2 cup pecans


Mix together and place in 8 x 8 greased pan.  Double the recipe if you want to use a 9 x 13 pan.
Bake at 350 degrees for 25 minutes.  Let the brownies cool before cutting them. Really delicious!!!
