Mile High Biscuits in the Iron Skillet


This is a biscuit recipe that rises and looks beautiful!

Ingredients:3 cups of sifted flour
2Tblsp. sugar
4 1/2 tsp. baking powder
3/4 tsp. creme of tartar
3/4 tsp. salt
3/4 C. shortening

2 tblsp. Melted butter
1 egg beaten
1 C. milk

Be sure to sift all your dry ingredients. Make a little well in the dry ingredients and add the egg and milk. Add more milk if the mixture is too dry. Knead very little and cut small biscuits and place in a buttered skillet. Bake until golden brown. Delightful!

Parma Tomato Beef Ribs

Ingredients:
12 chuck beef ribs with bones
3 stalks of celery
2 onions
4 cloves of garlic
1 jar of Mario Batali Arrabiata Pasta Sauce 24 oz.
1 jar spaghetti sauce
1 jar Sun Dry tomato spread
1 package Parma Rosa Knorr sauce mix
1 can beef broth
2 tsp. oregano
2 tsp. basil
1 package of GNOCCHI

Saute onion, celery, and garlic in olive oil. Add beef and oregano and basil.
add the other ingredients and simmer on low for 4-6 hours. Add 1 package of Vigo GNOCCHI. Serve over spaghetti. Delicious!

We tried this at Publix and bought all the ingredients! What a treat!!!

Coming home to Chicken Soup


On these cool autumn days, I love soups. This past weekend was Mary Ellen's 21st birthday. I can't believe how old she's getting! We spent the day in Cool Springs, in Nolensville and Arrington--shopping, antiquing, to the vineyards, and the Amish market. Before we left, I started up some Homemade Chicken Soup to fill the home with a wonderful aroma and to fill our tummies when we got home.

National Guacamole Day on Sept.16th!

For 20 Kindergarteners in my class!

GUACAMOLE
10 ripe avocados, peeled,seeded,diced
15 ripe Roma tomatoes, diced
1 1/4 cups minced sweet white onion
4 jalapeno peppers, seeded and diced
1 1/4 cups cilantro, chopped
2 cloves of garlic minced
2 limes squeezed
Herdez salsa
salt and pepper
drizzle of oil

Chess Pie

Pie Crust
2 1/2 cups flour
1/4 tsp. salt
1 cup Crisco
1 egg
1/4 cup cold water
1 Tblsp. distilled vinegar

Mix flour and salt. Cut in Crisco.
Mix egg,water, and vinegar. Roll into pie crust.

Filling
1 1/2 cups sugar
1 Tblsp. cornmeal
1/2 cup melted butter
1 Tblsp. vinegar
1 tsp. vanilla
3 eggs beaten

Combine filling ingredients. Stir in eggs and mix thoroughly. Pour into pie shell.
Bake at 350 degrees for 50-55 minutes. Yield one 8=inch pie.

I have made this pie for years! Delicious!

Happy Easter Passing

Our dear friend, Mac, passed from this life to heaven today. We will miss him and know how much he meant to all that he met and loved. I am thankful to remember his teasing and generosity to our family. He included us in his heart just like family. Mac, you are so loved and missed, dear one.

Country Style Rib Stew

Ingredients:
2 onions, diced
4 cloves of garlic, diced
pork ribs, cubed and deboned
1 banana pepper, diced
6 carrots, sliced
4 potatoes, cubed
1 bag mixed vegetables, frozen
1 can corn and peppers
1 can chili beans
1 can black beans, drained
1 can tomato sauce
2 Tblsp. barbecue sauce
1/2 tsp. cumin
1/2 tsp. oregano
2 bay leaves
salt and pepper

Fry onion and garlic and meat and banana pepper.
Add other ingredients and water.
Simmer for a whole day and serve with homemade tortillas! Yum!
