Coconut Cheddar Cornbread Mini Muffins

Ingredients:
1 cup flour
1 cup yellow cornmeal
1/2 cup sugar
2  tsp.salt
3 1/2 tsp. baking powder
1 cup milk
1/3 cup vegetable oil
1 large egg
1 bag of shredded coconut, toasted
2 cups shredded cheddar cheese
2 tsp. red pepper or cayenne pepper or chili powder

Spray baking spray on mini muffin baking pan.  Fill each mini muffin place and then, bake at 350 until done.  A real treat!

Mexican Wedding Cookies for Andrew and Mary Ellen July 12th



 
 
Mexican Wedding Cookies
 
4 sticks of real butter
1 1/2 cups sugar
1 tsp. salt
3 large eggs
2 Tblsps. vanilla
4 2/3 cups of flour
2 cups of minced pecans
 
Beat butter, sugar and salt until fluffy.  Beat in eggs and vanilla, one at a time. Beat in flour gradually.  Combine pecans, slowly.  Chill.  Scoop in small balls and bake at 350 for 12 minutes.  Sift powdered sugar over them.  Serve in baking cups!  Viva la galleta!
