Beef Bourguignon
Ingredients:
8 slices of bacon, cut
3 1/2 Tblsp. olive oil
3 lbs. beef
6 carrots
1 white onion
3 green onions
1 tsp. salt, pepper, thyme
2 Tblsps. flour
3 cups wine (rose)
3 cups beef stock
2 tblsp. tomato paste
5 cloves of garlic, minced
2 crumbled bay leaves
pearl onions, frozen
6 Tblsps. butter
1 lb. mushrooms, sliced
1. Simmer bacon until crisp, remove and drain.
2. Dry beef and cut in small squares. Sear on all sides in the bacon grease. Set aside.
3. Saute onions, celery, and carrots in bacon grease.
4. Add bacon and beef. Add flour, salt and pepper.
5. Add wine and beef stock, tomato paste, garlic, thyme and bay leaf.
6. Bake at 325 degrees for 4 hours with the lid off.
7. Melt butter and saute pearl onions for 10 minutes. Add green onions and mushrooms and warm for 10 minutes.
8. Add to beef mixture. Bake for an hour.
9. Serve with cornbread!
