Banana Oatmeal Pecan and Date Bread

Ingredients:

1/2 cup butter
1 cup brown sugar
2 eggs
4 mashed bananas
1 tsp. vanilla
1/4 tsp. salt
1 tsp. baking soda
2 cups flour
1 cup whole oats
1/2 cup chopped pecans
8 dates, chopped

Cream the butter and sugar well. Add the eggs, bananas and vanilla. Mix in the dry ingredients.
Bake for 70 minutes, checking often! Yummy with cream cheese!

Peanut Butter Cookies


Ingredients:

1 cup sugar
1 cup brown sugar
1/2 cup butter
1/2 cup shortening
1 cup peanut butter
2 eggs
2 1/2 cups flour
1 tsp. soda
1 tsp. baking powder
1/2 tsp. kosher salt
2 tsp. vanilla

Mix the ingredients in order.
Place on the pan and print the fork twice.
Sprinkle raw sugar and top each cookie with a peanut!
Great for athletes!

Pumpkin Bread


Ingredients:

1 1/2 cups sugar
1/2 cup oil
1/4 cup melted butter
2 eggs
1 can mashed pumpkin (1 lb.)
1 3/4 cups flour
1 tsp. baking powder
1 tsp. baking soda
1/3 tsp. salt
2/3 tsp. cloves
2/3 tsp. nutmeg( freshly grate)
2/3 tsp. allspice
3/4 tsp. cinnamon
1 tsp. vanilla
1/3 cup water

Preheat oven to 350 degrees. Grease and flour 2 9x5 pans.
Combine the ingredients in order and bake for an hour! Delicious!
A wonderful aroma in the home!

Chili


Ingredients:
1 yellow onion, diced
3 cloves of garlic, diced
3 fresh tomatoes, diced
1 pound of ground chuck, cooked
2 cans of kidney beans
2 small cans tomato sauce
1 can Rotel tomatoes
1 small can tomato paste
2 cups water
1/2 jar Herdez salsa
2 tblsp. Masa harina
2 Tblsp. chili powder
2 tsp. ground cumin
Saute the onions and garlic. Add the ground chuck and chili powder and cumin. Drain the oil before adding all the other ingredients. Simmer for the whole day!
We put a spoonful of mashed potatoes in the center on top of each chili bowl!
Yummy! Serve with crackers!

Shrimp Gumbo


Ingredients:

1 yellow onion, diced
3 cloves of garlic, minced
1 bunch of celery, chopped
1/2 green pepper, diced
1/2 red pepper, diced
1 chicken, de-boned and chopped
2 1/2 pounds of large shrimp
5 filets of tilapia, cut in small pieces
1 polish sausage, sliced
2 cups chicken broth
1 can Rotel tomatoes
Salt and pepper
Basil and bay leaf
1 pkg, frozen gumbo vegetables, Kroger
3 carrots, sliced

Saute the garlic and onions and celery. Add the chicken and broth and the other ingredients.
Simmer for 4 hours and serve over rice! Yum!

Mile High Biscuits in the Iron Skillet


This is a biscuit recipe that rises and looks beautiful!

Ingredients:3 cups of sifted flour
2Tblsp. sugar
4 1/2 tsp. baking powder
3/4 tsp. creme of tartar
3/4 tsp. salt
3/4 C. shortening

2 tblsp. Melted butter
1 egg beaten
1 C. milk

Be sure to sift all your dry ingredients. Make a little well in the dry ingredients and add the egg and milk. Add more milk if the mixture is too dry. Knead very little and cut small biscuits and place in a buttered skillet. Bake until golden brown. Delightful!

Parma Tomato Beef Ribs

Ingredients:
12 chuck beef ribs with bones
3 stalks of celery
2 onions
4 cloves of garlic
1 jar of Mario Batali Arrabiata Pasta Sauce 24 oz.
1 jar spaghetti sauce
1 jar Sun Dry tomato spread
1 package Parma Rosa Knorr sauce mix
1 can beef broth
2 tsp. oregano
2 tsp. basil
1 package of GNOCCHI

Saute onion, celery, and garlic in olive oil. Add beef and oregano and basil.
add the other ingredients and simmer on low for 4-6 hours. Add 1 package of Vigo GNOCCHI. Serve over spaghetti. Delicious!

We tried this at Publix and bought all the ingredients! What a treat!!!
