Spring Rolls

Ingredients:
1 red onion diced
2 cloves of garlic diced
Fry in two pans I melted butter.
In frying pan, sauté two pork chops until browned on both sides. Slice very thin and sauté in the onions and garlic.


In the other pan, add:
Carrots, sliced thinly and julienned
Bean sprouts
Celery diced
3 orange peppers diced
Pea pods sliced thinly
Cabbage sliced thinly
Salt and pepper
1 tsp. ginger
Teriyaki low sodium
Add the pork chop mixture and mix well.
Put spoonful of mixture on an egg roll wrapper and roll up.  Fry on both sides until brown.
Serve with Asian noodles.  Gung Hay Fat Choy!

Blueberry Muffins

Ingredients:
1 1/2 cups flour
3/4 cups sugar
1/2 tsp. salt
2 tsp. baking powder
1/3 cup oil
1 egg
1/3 cup milk
1 tblsp. Vanilla
Small plate of blueberries smashed
1 cup blueberries, folded in batter
1/4 cup melted butter

Mix all the ingredients together and put loaded spoonful in muffin cups.  Bake at 350 for 20 minutes.

Jambalaya

Ingredients:

1 diced white onion
5 cloves of garlic, diced
1 kielbasa, cut in small pieces

Saute in a pan until browned

Add to the pot:
2 bay leaves
1 tsp. cumin
1 tsp. italian seasoning
sprinkle of creole seasoning
salt and pepper
2 tblsp. salsa casera
6 new potatoes, cut in small pieces
peppers diced
can of corn, drained
tomato sauce
2 tomatoes diced
6 filets of tilapia, cut in small pieces
shrimp
Chicken shredded

Simmer for 2 hours and serve over rice.

Basic Homemade Bread Recipe

Ingredients:
1 package of dry yeast

2 cups warm water
3 eggs
3 tablespoons sugar
1 tablespoon salt
2 tablespoons oil
6 - 6 1/2 cups all purpose flour
1 stick melted butter

Mix the ingredients in a mixer, very slowly using the dough hook.  Add melted butter last, coating the ball of dough.  Set aside to warm and rise.  Then, punch down and divide into two bread loaves.

Butterscotch Banana Bread

4 ripe bananas
1/2 cup melted butter
1 cup brown sugar
2 eggs
1 tblsp. Vanilla
1 tsp. baking soda
Pinch salt
1 1/2 cup flour
3/4 cup chopped pecans
1 cup butterscotch morsels

Gingerbread Cookies

3/4 cup butter
1 cup brown sugar
1 egg
3/4 cup molasses
4 cups flour
1 tsp. Ginger
2 tsp. vanilla
1 tsp. nutmeg
1 tsp. cinnamon
2 tsp. pumpkin pie spice
1/2 tsp. salt

Crunchy on the outside and Soft on the inside! BISCUITS!

Today, I was not able to access the internet and found an old cookbook that I used when I first got married.  Thankfully, I used it as a guide to make a biscuit that was crunchy on the outside and soft on the inside - for my husband's preference!  He loved it and went back for seconds!  That is a compliment to me.

Ingredients:

Sift together

  • 2 cups flour
  • 1 tsp. Kosher salt
  • 1 Tblsp. baking powder
  • 1/2 tsp. baking soda
  • 1Tblsp. sugar                                                                                                                        
Cut in 1/3 cup Crisco
 Add 3/4 cups of buttermilk and then some!

Melt butter in an iron skillet and place biscuits in a row, covering them on both sides with the butter.
Bake at 400 degrees until brown on top - delicious!
