Summer Coleslaw

Ingredients:

1 head of cabbage finely sliced
2 vidalia onions, diced
2 banana peppers finely chopped(or green peppers)
5 grated carrots
1 1/2 cups mayo
1 cup vinegar
2 tblsp. sugar
1 tblsp. coarse ground pepper
salt to taste

We enjoy slaw with grilled fish or barbecue!!!

Delicious Meatloaf


Ingredients:
1 large roll of ground chuck
2 vidalia onions, diced
5 cloves of garlic, finely chopped
3 grated carrots
2 beaten eggs
1 cup oatmeal
1/3 bottle Kroger thick and spicy barbecue sauce
garlic powder
salt and course ground pepper

Put all the ingredients in a large bowl and thoroughly mix everything together. I use my hands and really work the mixture until it is well blended. Shape the meatloaf in a pan and coat the top with Heinz ketchup. Sprinkle basil leaves over the top! Bake in the oven for 2 hours! I made this tonight and it was scrumptious!!

Hot Cross Buns for Easter


Ingredients:

1 cup warmed can evaporated milk
1 stick butter
1/2 cup sugar
1 tsp. salt
1 cup raisins
1 tsp. allspice
2 eggs
1/4 cup warm water(105-115 degrees)
1 tsp. sugar
2 pkgs. yeast
5 cups sifted flour

Mix milk, butter, sugar salt, raisins, and allspice and warm for 10 minutes.
In another bowl, mix the water, sugar and yeast and let rest for 10 minutes.
Put liquid mixture in the mixer and add eggs and slowly add flour.
Add yeast mixture slowly.
Knead on a lightly floured board until elastic.
Shape into a ball, turn in a greased bowl, cover with a cloth, and let rise in a warm place for 1 hour. Shape into 1 1/2 inch balls and place on a greased pan.
Let rise for 1/2 hour and the bake at 350 degrees for 12-15 minutes.
